I know...I know...

I already posted today, but since about 99.9% of you really could careless about my out of shapeness, I thought I would post this DELISH recipe...It's a totally simplified version of every other recipe of Cafe Rio sweet pork, whatever you want to call it.. It's SO EASY, and SO GOOD!!

pork roast
1 (16oz) bottle of salsa
1 can coke, *ETA* or pepsi (just not jazz vanilla cherry) or dr. pepper
2 c. brown sugar

Place pork in crock-pot and fill it half way up with water. Cook roast on high for 5 hours. Drain off water. Cut pork in thirds. Mix together ingredients (salsa, coke, brown sugar) and put on top of pork. Cook an additional 3 hours on high. Shred pork with forks. Leave it on low until ready to serve.

Now...this is what we do...We always buy our meats in bulk. It's usually cheaper that way. I don't know how big the roast is supposed to be, but ours wasn't way big (we cut the one we bought into like 4ths) but....so I put that in and cooked as above. Now, just a few suggestions...If your roast isn't ver big, just half the rest (which is what I did..) However...do NOT use Jazz vanilla cherry pepsi instead of coke. You CAN taste the difference....but if it's all you have, it's not horrible...lol..(yes that's all we had. I think coke is disgusting, so why would I have it...) anyway...also, do not use that much brown sugar. Maybe it was the sweet pepsi I used, but I still wouldn't use that much brown sugar. It's really sweet..but yeah...otherwise it's SO GOOD!!! I would make it everyday if I could...SUPER DELICIOUS.

I too make this delicious recipie and I think I use close to a 3 lb roast (which is an incredible amount of meat). I like Pepsi also and I use plain pepsi and it tastes fine. I don't know about this Jazzy stuff!

I have made this but I have never put coke in it! Interesting, I will have to try it. This is the lens I got, and I LOVE it!!!
